If you live in the South, than you’ve probably heard of the combo Cornbread & Buttermilk. It’s as a classic Southern staple like, biscuits & gravy, beans & cornbread, shrimp & grits or fried chicken & creamed potatoes. Surely, y’all have heard of these combo dishes? They’re known as the carbohydrate platters. 🙂 My kids will eat all of these combo except for the buttermilk, which I don’t blame them one bit. (It’s not my favorite, either.)
So in my house our twist on the old Southern classic is Blueberry Cornbread & a breakfast Smoothie, as in a PB&J smoothie! My kids love this for breakfast & I love it because it’s so quick & easy & packed with calcium & protein! We are also trying to cut back on using white flour in our house, so the cornmeal is an extra bonus for us!
To Make a Peanut Butter & Jelly Smoothie I use the following:
- 1 cup of yogurt (any flavor, my kids like vanilla or strawberry)
- 1 cups milk
- 2 tablespoons strawberry (or any flavor) jelly
- 2 tablespoons peanut butter
- 1 bananas
- 2 tablespoons honey or agave
- 2 teaspoons wheat germ or protein powder
- ice cubes
The kids come running when they hear the blender going. Well, to be honest they fight over who gets to push the buttons to make it pulse & blend. Oh the joys of being a morning referee in our house. 😉
Now for the Blueberry Cornbread…I am always wanting something quick in the mornings (aren’t we all?) Making cornbread from scratch isn’t always ideal for me. So I grab a box of Jiffy cornbread, follow the directions on the back of the box (adding an egg & milk) & then I add a handful of rinsed fresh blueberries in the mix. I always make my cornbread in a cast iron skillet. It is the best that way. Sometimes, I’ll make it the night before or I’ll do it quickly in the morning. It’s such an easy thing to pop in the oven while everyone is getting dressed.
The taste of the blueberry cornbread fresh from the oven with agave or honey drizzled over it is amazing! It goes perfectly with any kind of breakfast smoothie. The best part is that my kids love it & I know it’s a quick & healthy breakfast for them to start their day off right.
