Let’s pretend I’m the hostess with the mostess right now. Because several bloggers & I are getting together to throw this virtual progressive dinner. Some are doing the salad (ahem…that would be me) some are doing the main course – etc… So if y’all were at my house right now, you would get to eat one of the most amazing salads I have ever made. But since you’re not really here in my house, we thought the least we could do is offer a scrumptious recipe & a huge giveaway prize to one of you lucky readers! *see down below for entry & details!*
Are you ready for this???
I’m going to go ahead & declare this salad to be one of the best you’ve EVER eaten.
Y’all it’s the dressing…it has butter in it. Need I say more?
It will rock your world.
The salad has an amazing Orange Balsamic Dressing made with Land O Lakes® Butter Half Sticks, orange zest, brown sugar – you know, all the good things in life.
Yep, that’s right they’re 1/2 sticks & perfect to use for all those recipes that call for a few tablespoons of butter!
Here’s what you’ll need~
For the salad:
5 ozs of Spinach
handful of fresh strawberries (8-10 at least) rinsed & sliced
3 oranges – peeled & cut in wedges
1/2 – 3/4 cup of roasted pine nuts
For the dressing:
1 Land O Lakes® Butter Half Stick
1/4 cup of EVOO
zest of 1 orange
2-3 Tablespoons of Brown Sugar (I used Splenda to keep it lower in calories)
1/2 teaspoon of garlic
3-4 Tablespoons of Balsamic
In a skillet, melt your Land O Lakes® Butter Half Stick & then saute your orange zest & garlic together. Add your brown sugar & balsamic stir together & heat until it’s almost boiling. Then reduce your heat & set aside.
In a salad bowl, toss your spinach, strawberries, oranges & roasted pine nuts together. You can either pour your dressing in your salad bowl or individually on your salad plates.
The taste is out.of.this.world. Yes, I’m saying that about a salad. It is divine.
(and if you use the brown sugar Splenda, there’s less calories & zero guilt!)
This, I can assure you will become a staple in my house for Spring & Summer.
For another alternative you can always add Chicken to the salad or add Quinoa like Cheryl did in her recipe to make it a complete meal.
