A few have asked for the recipe of the homemade granola we had at the birthday brunch. It was delish, and there wasn’t any sugar added. All ingredients were sugar free. So here goes…
2 cups old fashioned oats
1 teaspoon of good vanilla
1 teaspoon of cinnamon
a pinch of salt
zest of an orange
1/4 brown sugar *splenda*
1/2 cup of sugar free maple syrup (or honey, but I used the sugar free syrup)
3/4 cup of dried cranberries
3/4 cup of shredded coconut
2 Tablespoons of peanut butter (I used Trader Joe’s white chocolate peanut butter)
Mix all ingredients, but dried fruit & chocolate chips (if you choose to add) in large bowl.
Preheat oven 350*
Bake 30-35 minutes. Stirring every 7 minutes or so.
Place & spread in greased cookie sheet.
After baking, add dried fruit & chocolate chips. Store in air tight container.
