I can thankfully say we have started a lifestyle change in our house & it is working! That alone is amazing. Because let me tell you, my middle name can be carbs, as in Kellie Carbs! Somehow our carb loving family has entered into a veggie eating, low salt & fish eating family. Again, it’s not that we’ve done away with the carbs, heavens no! But the good stuff has entered in & there’s finally a balance!
So let me tell you about our favorite dressing sauce. It’s good. Really-really good.
Yep, that’s right it has spinach in it, limes, pineapples & cilantro. Good stuff. Do you all buy your fish at Costco? We do. We love their Tilapia & Mahi-mahi fish. Yes, it’s frozen & in vacuum sealed bags, but you can’t beat it for convenience! I place the fish in the oven & sprinkle Mrs. Dash no salt lemon pepper on it while it’s baking.
While the fish is baking….I whip this sauce up & it is so easy & quick to make.
Trust me, you will rarely find a difficult recipe on this blog. I simply don’t have time for that kind of cooking.
Cilantro, Lime & Pineapple Dressing Sauce
1 cup or handful of rinsed spinach
juice of one lime
a big handful of rinsed cilantro
1/2 cup of pineapple chunks
1/2 – 3/4 cup of ranch dressing
zest of one lime
Pulse & mix together in a food processor or a blender. Depending on how many people you are serving, obviously the recipe can be altered. I typically have some extra & use it on a salad the next day. It is so fresh & summery tasting & is the perfect sauce if you’re a smother & cover kinda girl, like me. (That’s a Southern term for those of you who don’t know.)
I’ll be the first to admit that clean eating is not always the funnest food to eat. Because I can pig out with the best of them. But thankfully, I can say it’s become more of a lifestyle change for us. Eating less processed foods has really made an impact on our energy level as well.
I am absolutely crazy about this dressing sauce & the thing is, it has veggies already blended into the sauce. Can we say dip for chicken nuggets??? Yep, you betcha. My kids love it. I think it must be the sweet side to it because of the pineapple. But it’s a win/win over here & you can’t beat how easy it is to make!
