This Lemon Blueberry Shortcake is seriously one of the best cakes I’ve ever made.
And I have made a few!
It’s also one of the easiest cakes you’ll ever make. It’s made with a cake mix, of course you can make one from scratch, if you wish. But the homemade topping on this shortcake is out of this world!
But wait…
I have something else to share with you…
Last year I shared my Strawberry Shortcake recipe on the blog, and to date it’s been one of my biggest posts. But a few weeks ago, I had a “V8” moment. (I love it when I get those!!!) I wondered what my Shortcake recipe would be like if I made it with other fruits, why not – right? So I gave it a try, and then my husband thought why not make the same version but with peaches. So that’s when I had my *V8* moment for this post.
So basically, all you’ll need is the recipe for this easy homemade topping and just add your favorite fruit of choice or any in season fruit.
How easy, right?
Now for Lemon Blueberry Shortcake the only thing different I did was:
wash the blueberries, and spread them out & allow them to dry
use the zest of one lemon and the juice from the same lemon
(all mixed together in a bowl)
one other lemon for slicing & garnishing* if desired
***you could also make the cake using a lemon cake mix, rather than a yellow cake mix, if you so desire***

It takes about 5 minutes to make the topping. Once you pour it over your cake and fruit, allow time to cool and then place in the fridge to cool, or you may serve it at room temperature. The nice thing about this cake is that the older it is the better it is!
It’s a great cake to make ahead before company arrives or if you’re taking it to a friend’s house.
