I’ll probably appear to be rambling. but that’s the beauty of a country song. Because there’s always a story to be told.

Every time I hear Craig Morgan’s song That’s What I Love about Sunday – it brings back a flood of memories.
…That’s what I love about Sunday:

My Sundays growing up were very similar to this song. All the way down to the chicken an’ some baked beans, and stroll to the end of the drive, grab the Sunday Times, grab a coffee cup.
But in that coffee cup, my Mom and I would put ice cream and make up crazy flavor combinations. Every single Sunday. Sometimes it was just your basic chocolate ice cream with regular milk poured over the ice cream (which to this day is still my favorite!) but other times we would add coffee and chocolate syrup.
That is, if we had a coupon for the Hershey’s syrup. 😉
That’s What I Loved about Sundaes!
So, you may be asking what I mixed together to make this?
Ingredients
- Vanilla or Chocolate Ice Cream
- 1/2 cup of coffee
- 1/2 cup of Pumpkin Pie Spice Creamer
- Chocolate Syrup
- Pumpkin Pie Spice
- Whip Cream
Instructions
- Pour or make a small cup of coffee. If you have a Keurig or Iced Coffee Maker - just use the smallest serving size. Mix it together with your Pumpkin Creamer and allow time to cool.
- Fill a coffee cup or Mason Jar with your ice cream.
- Layer in a dash or 2 of Pumpkin Pie Spice in between the ice cream.
- Pour your Coffee & Creamer mixture over your ice cream.
- Drizzle some chocolate syrup over your ice cream and coffee mixture.
- Top with Whip Cream
- Add another dash or 2 of Pumpkin Pie Spice
- Enjoy!
I promise, it’s very little effort on your part, but HUGE on flavor!
