You all will either love me or hate me for this…
The choice is yours.
But I know with the words Brownie Batter Ice Cream in my title I have your attention, right?
Well, truth be told you can also add the word: Skinny-ish.
Yes, Skinny-ish.
Because one of the {only} 4 ingredients in this recipe is a Coke Zero.
As in, zero calories.
I honestly don’t think it would taste as good if you tried it with a regular Diet Coke, IMO. But a Coke Zero tastes so much like the real thing, that I think it all blends so well together! In fact if you ask me ~ it’s fantastic together!
Here’s what you’ll need:
1 box of Brownie Mix (one that is for an 8×8/9×9 size pan)
1/2 to 3/4 can of Coke Zero
1 can of Low Fat Sweetened Condensed Milk
1 container of Low Fat Whipped Topping – like Cool Whip
Bake your brownies according to the temperature on the box. Usually it’s 350*. However, the ONLY thing you’ll mix together is your brownie mix & your Coke Zero. Mix well, and place in a greased baking dish & bake accordingly.
Once your brownies are cool, cut into small chunks.
In a large mixing bowl, mix your Sweetened Condensed Milk & your Whip Cream together.
Add your brownie chunks to the mixture, and fold your brownie chunks into the mixture.
Place in a freezer container & freeze for about 2-3 hours.
Serve & enjoy!
Toppings are totally optional, but even better! 😉
