Summer has officially started in our household.
The kids are out of school, and the best thing I did right before school got out was buy the “mother load” in groceries!
It’s hard finding a new balance during the Summertime if you have young school aged kids. You want your kids to have the best summer ever, but you also want to maintain some normalcy for you & your house. About 2 months before school was out I started a major life style change for myself, and I have been more determined than ever to keep up with my life style changes throughout the Summer. Making healthier choices in everything that I do is part of my personal changes. Not just for myself but also for my entire family. So when POPSUGAR and Chobani Simply 100 Greek Yogurt reached out to me about sharing some of my routines and how I plan to have balance this Summer, I thought it was a perfect fit to help me stay accountable to myself, share with you all + honestly & truly we happen to love their yogurt!
For starters, I am getting my kids in the kitchen this Summer! Teaching them about making healthy choices while keeping my commitment to myself about eating healthier as a family is a sure way to stay on track! Plus, the kids love being in the kitchen!
We are baking, creating, cooking…and yes, cleaning together! Over the weekend we made these Greek Yogurt Blueberry Lemon Muffins together. They are truly the most moist muffins you’ve ever eaten. Made from scratch with Chobani Simply 100 Greek Yogurt to make the batter stay nice & moist.
Around our house, we never go for perfection, we go for taste! These are amazing, and very easy to make. Another great bonus about all the Chobani product’s is that they are high in protein and contain fiber. Which makes these muffins even more healthy for your family!
- ⅓ cup butter, melted
- 1 cup sugar
- 3 T lemon juice
- 2 eggs, room temperature
- 1 tsp of vanilla extract
- 1 & ½ cup all-purpose flour
- 1 tsp baking powder
- ½ tsp salt
- ½ cup Chobani Simply 100 (Vanilla flavor) Greek Yogurt
- 2 T lemon zest
- 1 cup blueberries, fresh or frozen
- ¾ cup powdered sugar
- 2 T lemon juice
Instructions:- Preheat oven to 375 F.
- In a medium mixing bowl, whisk melted butter, sugar, lemon juice, eggs and vanilla.
- In a separate bowl, mix together the flour, baking powder, and salt.
- Add the flour mixture to the butter mixture alternately with the Chobani Simply 100 (Vanilla flavor) Greek yogurt, stirring gently.
- Fold in lemon zest and blueberries. Do not over mix.
- Place your muffin (cupcake) liners in your muffin tin and pour your batter into the linings filling it about 1/2 way. Mixture makes approx 12-15 muffins. Bake at 375 F for 25 mins.
- Allow muffins to cool about 15 minutes and remove to a wire rack or leave them in the muffin tins.
- Combine ¾ cup powdered sugar, 2-3 T lemon juice and about 1 tsp of lemon zest to form a glaze. Drizzle muffins with the topping while warm.
As in the healthy kind.
Full of protein and only 100 calories in each serving of yogurt!
Just add your choice of fruit and/or zest – fold in together.
Pour in your Popsicle molds and freeze overnight.

I mean, let’s be honest…right?
So instead of my husband, I’m mowing our grass to keep up with my routine of staying active.
Lastly…this is a HUGE commitment for me this Summer.
Drinking water.
Eating healthy with Chobani Simply 100 Greek Yogurt (among other things), staying active, planning, prepping & drinking water is how I plan on staying afloat (get it?) this Summer. One of the most important lessons I’ve learned from life is to keep things simple and always try to plan ahead for bumps in the road. That happens to be another reason why I love Chobani Yogurt.
