Beat the heat with this incredible Margarita Poke Cake Recipe.
There’s nothing like a cool cake during the Summer! I love poke cakes for many reasons, they’re so easy + it seems the “older they are – the better they are!”
Heck, who am I kidding? I love any kind of cake, period.
Here’s what you’ll need:
1 box of butter or white cake mix.
non alcoholic Margarita Mix
1 can of sweetened condescend milk
1 container of whipping cream (cool whip)
limes & lemon peel for garnish *optional
Directions:
*Bake your cake mix according to the back of the box. The only thing you’ll replace is the water. Add the Margarita mix in place of the water. So if the back of the cake box asks for 1/2 cup of water, add the Margarita mix in place of it.
*Allow cake to cool. When cake is still warm, poke holes in it with a wooden spoon.
*In a large measuring cup or small mixing bowl, add 1/2 the can of sweetened condensed milk & 1/2 cup of the Margarita mix and mix well. Pour your mixture over the cake, and into the holes. Spread evenly with your wooden spoon.
*In a separate bowl (preferably one that has a lid or you can cover) add the container of whipped topping, the remaining 1/2 can of sweetened condensed milk, and 1/4 cup of Margarita mix. Blend & fold together. Cover your bowl and place in the fridge for about 2 hours. This is to allow the topping mixture to firm up again.
*Once your topping has been in the fridge for about 2 hours, spread evenly on top of your cake & the filling.
*Add cut up limes and lemon zest for garnish *totally optional.
*Serve immediately or store covered in the fridge until ready to serve.
