We can’t leave the grocery store without one.
My middle child is a fruit loving, watermelon fanatic, slowing talking Southern boy.
Anything to do with Watermelon he wants it. Heck, even our kids’ shampoo is Watermelon scent!
So needless to say, I always have cut up watermelon in our fridge during the Summer. The other day, I was craving something really different but light & refreshing. So I came up with this amazing Watermelon Fiesta Salad recipe, and now I want to eat it everyday.
It has all of my favorites in it!!!
If you don’t care for cilantro or lime than this may not be the recipe for you. Because it’s loaded with both. Again, some of my very favorites when it comes to refreshing ingredients!
Here’s what you’ll need:
a plate full of {seedless} cut up watermelon
1 whole avocado, cut in chunks
1/2 cup of black beans {drained & rinsed}
goat cheese {about 1/4 cup or so}
a handful of cilantro
a sprinkle of sea salt
juice of 1 lime
Yep! It’s that easy & the flavors are all so good together.
I know there’s some really good watermelon salad recipes out there, but this one is so good with a little touch of Mexican flare. Some people think of Mexican food as really heavy food, which it is! But there’s also a lighter side to Mexican food. I have always enjoyed the fresh flavors in cilantro & lime, and of course with avocado & black beans! They’re perfect together. Adding watermelon & just a touch of goat cheese for creaminess makes it all go together in perfect harmony!
Of course the part that it can be made in minutes as long as you have the watermelon already cut up, helps as well.
Does my son like this recipe? No. Anything with the name “salad” he stays clear of. But he can have the cut up watermelon, and I’ll take this salad any day of the week!
