You’ll love this BBQ Cornbread Pie. Comfort food straight from a cast iron skillet.
Y’all, my husband loves BBQ. I mean, he loves it.
So I’ve been experimenting with this recipe for awhile. You may remember my recipe for Taco Cornbread Pie? It’s one of our family staples. We love it, and I think it’s been popular with you all as well. So I thought I would create a different twist to the “cornbread pie” but this time with BBQ pork and all the fixins you would see at a Southern cookout. Obviously, you can switch around a few layers of this BBQ Cornbread Pie according to your family’s particular favorite ingredients, so this is just a guide or how I make ours. The nice thing about it, is you can control the BBQ sauce or the amount of meat you put in the pie.
In a cast iron skillet I started with a pound of BBQ pulled pork. You can use something like this or use some you may already have on hand.
And then a layer of mashed potatoes. I boiled 4 larger size red potatoes and added a small can of green chilis to my mashed potatoes to give it extra flavor & kick, but you could also use a packaged mix to speed up the process.
Then I proceeded to layer in the remaining ingredients. This part goes really fast. So if you already have some leftover mashed potatoes this BBQ Cornbread Pie could be made in 30 minutes or less. Another thing to point out, is that you don’t even really need to have your stove top on, unless you are cooking your meat. All of this will be baked in your oven.
Ingredients
- 1 lb of shredded BBQ with sauce (beef or pork)
- a layer of mashed potatoes (I made my own with about 4 large red potatoes or use a mix)
- 1 can of green chilis
- 1 1/2 cup of shredded cheddar cheese
- 1 box (such a Jiffy) cornbread mix - made according to the box instructions to pour on top and bake
- BBQ Sauce for topping *if desired
Instructions
- Preheat oven to 400*
- In a cast iron skillet, layer the following ingredients.
- 1 lb of shredded BBQ pork or beef (with sauce)
- a layer of mashed potatoes. (you can make your own or use a mix)
- spread the shredded cheddar cheese over your potatoes
- then layer a can of green chilis over your cheese
- pour the mixture of your cornbread over all the layers. (I used a box of Jiffy cornbread mix. I find 1 box works perfectly when baking these cornbread pies)
- Bake for 20 minutes in a 400* oven (oven times may vary)
- Drizzle extra BBQ sauce on top - optional
This recipe comes together very quickly. It truly could be considered a dinner in 30 minutes or less, depending on whether you make your own mashed potatoes. I served it with some Apple Cider Vinegar Cole Slaw on the side so our dinner could have all the fixings of a true Southern meal.
