Well, hello my friends! So nice to see you here and discussing my first “Fall” recipe of the year. May I introduce you to her??? It’s a Pumpkin Pizza Cookie and you guys, I’m in love with her cuteness.
Truth be told, I’ve been planning & thinking about her (the pumpkin pizza cookie) debut for awhile now. I’ll be the first one to admit, I’m no expert when it comes to cookie decorating or even using cookie cutters. But this – you guys is 100% error proof! I promise.
First, you’ll start out with your cookie dough & bake it in a pizza pan. (Make sure your grease your pan!)
Oh, did I mention that this cookie dough is store bought???
It is!
I also need to mention that my pizza pan came from the dollar tree. Yep, a total of $1!
See, I told ya – it’s going to be so easy & affordable to make this pumpkin cookie pizza – I promise!
Truth be told, I bought mine YEARS ago! Like 20 years – at least, but these are very similar if not identical to the ones I used. Obviously your local craft store like Michaels or Hobby Lobby would have some as well.
I kinda feel like I cheated a little and didn’t create a recipe for this Pumpkin Pizza Cookie. I honestly, thought I would have to do so. But when I realized that 1 bag of the cookie mix would fill my pizza pan perfectly, I said – forget it! Let’s make this easy for everyone! 😉
Because easy is good, right? Just make sure you grease your pan really well, if you don’t have a non-stick pizza pan.
- I followed the back of the instructions for both cookie mixes.
- The only thing I did differently for the sugar cookie mix – is I added more flour (1/4 cup). Just to make the dough a little stiffer while using the cookie cutters.
- I also added about 2 teaspoons of pumpkin pie spice while mixing it up. This is totally a preference, but I thought it gave my dough a little texture.
- The baking time took a little longer than baking individual cookies. I believe my pizza cookie took around 20 minutes. But start watching yours around 18 minutes or so. Ovens vary.
Ingredients
- 1 stick of melted butter
- 1 box of powered sugar
- drops of yellow food coloring
- drops of red food coloring
Instructions
- Mix your butter and powered sugar together in your mixer.
- Gradually add your drops of food coloring to you get the shade of orange you like.
- Spread on top of your cookie.
I piped out a circle with a ziplock back & filled in the “stem” of the pumpkin pizza cookie.
