This Summer Caprese Chicken Avocado Salad has to be one of my very favorite salads. You can throw this together in a matter of minutes with your leftover chicken in the fridge.
My husband actually uses the word “refreshing” to describe this Summer Caprese Chicken Avocado Salad. He loves it as much as I do. The lemony base dressing makes the flavors burst even more, in my opinion.
Summer Caprese Chicken Avocado Salad
Ingredients
- 4-5 Grilled Chicken Tenderlions
- 2 packs 16 oz each Cherry Tomatoes sliced in half
- 1 pack Mozzarella "Pearls"
- 1 bundle Basil - cut thinly
- 1-2 sliced/chunk ripe avocados
- 1/4 cup EVOO
- juice from an entire lemon +/- depending on your taste
- dashes of salt - to your liking
- 1 1/2 teaspoons of Lemon Pepper
Instructions

In a mixing bowl, slice your washed cherry tomatoes in a bowl. Add in your sliced/cubed grilled chicken along with your cut up basil leaves.
***I typically leave out the avocado and the mozzarella pearls until right before serving***
Mix all the other ingredients together in with your tomatoes, basil and chicken. Store in fridge until ready to serve.
Add your avocado & mozzarella pearls right before serving.
