If you’re trying to scale back the carbs or trying to do Keto, you’re going to love this treat. These Keto Chia Seed Coconut Milk Popsicles are SO refreshing! They’ll even help cure a sweet tooth that you might be having anytime of the day!
The temps are warming up around here. The grass needs to be mowed, and there’s gorgeous flowers to plant. On any given day, after working outside I love a cold treat! That’s what made me come up with the idea to make these Keto Chia Seed Coconut Milk Popsicles.
Keto Chia Seed Coconut Milk Popsicles
Ingredients
- 2 cans Coconut Milk
- 1/2 cup Chia Seeds
- 2 packets Artificial Sweetener (such as Sweet N Low or Equal)
- 1 teaspoon Vanilla extract
- handful rinsed blueberries
- handful rinsed sliced strawberries
Instructions

In a mixing bowl with a pour spout, mix the coconut milk, Chia seeds, sweetener and vanilla together.

Add in some (not all) blueberries and strawberries.

Leave some fruit out to place in the middle of the popsicle mold.

Pour in popsicle molds and freeze.

Freeze for several hours or overnight until frozen.
These Keto Chia Seed Coconut Milk Popsicles are a perfect frozen treat. If you ask me, the “vital” part of this recipe is the Vanilla extract. Coconut milk is very mild in flavor. It’s delicious, but mild. When you add the Chia seeds and the vanilla flavoring it takes on a whole new flavor. The Chia seeds will “bloom” from the wet mixture and of course the berries make everything taste so fresh and delicious.
