What better way to celebrate Memorial Day, Independence Day, the Olympics (team USA!) or Election night than serving up a delicious American flag fruit cookie pizza?
Truth be told, I made this American Flag Fruit Cookie Pizza last year. I didn’t take many pictures, because I was truly living in the moment of enjoying our July 4th party. A few days prior to July 4th last year, we decided to invite our neighbors & friends to a pool party. My shopping list was pretty simple, hot dogs, chips, watermelon, popsicles and stuff to make this huge American Flag Cookie Pizza. There’s nothing better than showing your true patriotic pride than making a food dish that has “red, white & blue” in the color scheme, am I right?
This American Flag Fruit Cookie Pizza is huge! I doubled my normal recipe, so I would be able to serve a crowd, and that’s one of the best parts about this recipe, is that it will serve about 20-25 people!
I used a large baking sheet (like this one) to make this recipe. This size of pan is larger than your traditional cookie/baking sheet. So it’s the perfect size when you have company coming over. It’s the size of pan that’s perfect for making those sheet pan dinners, so it’s a multi-use staple to have in your kitchen. I should probably add that I shop mainly at Aldi’s. Where everything is less expensive and fresher, IMO! If you haven’t been to one, you must go – soon!

RECIPE FOR AMERICAN FLAG FRUIT PIZZA COOKIE:
COOKIE BASE:
2 Sugar Cookie Bag Mixes
1 cup – 2 sticks of butter
2 extra large eggs
1-2 tablespoons of water *if needed
FROSTING + EXTRA FOR PIPING:
2 blocks of soften of cream cheese
2 boxes of powered sugar
1 teaspoons lemon juice
2 teaspoons of clear vanilla extract
FRUIT TOPPING and EXTRA FROSTING:
1 pint of rinsed and air dried blueberries
2 lbs of rinsed, air dried and sliced strawberries
1/2 cup of white chocolate chips
1/2-1 whole tub of whip cream
INSTRUCTIONS:
Preheat oven to 350* and grease or spray large baking pan and set aside
Mix all your cookie base ingredients together in a mixing bowl.
You can dump the bag cookie mixes, butter and eggs and mix them together.
*Only add water to your cookie mixture if you feel your mixture is too dry in consistency.
Spread your cookie mixture on the prepared greased pan.
Bake for about 18-20 minutes.
PLEASE check on your cookie base while baking. *Every oven is different.*
Allow your cookie base to cool completely.
FROSTING + EXTRA:
In a mixing bowl, mix with a blender your soften cream cheese, lemon juice and powered sugar.
Once fully blended, add your vanilla extract and mix gently together.
NOTE: you will have *EXTRA* frosting. This will be stored in the fridge for the piping in between the berries.
Spread your frosting evenly on top of the cooled prepared cookie base.
FRUIT TOPPINGS + EXTRA FROSTING:
Here comes the fun part!
Start decorating your cookie like the flag.
Place your blueberries in the upper left in a small square pattern.
Add your strawberries (going in the same direction) in rows.
Leave room for the decorative piped frosting to go in between the strawberries.
Once you’re done with the rows of strawberries, now it’s time to add your piped frosting mixture.
I used a gallon storage bag, and a random large decorating tip and piped it in between the berries.
Cut a very small hole in the corner of your gallon storage bag, and drop the decorating tip in the hole to fit securely.
Then pipe your frosting in between the rows.
Add your white chocolate chips for the stars!

This recipe can be done in steps, and when you have time! That’s one of the beauties about this recipe. You can make the cookie base, frosting and cut the berries several hours before you plan on serving. In fact, the frosting works best if it has time to be in the fridge. I do recommend, that you place the fruit topping, and the piped frosting on just before serving. That way everything looks fresh and beautiful.
It truly is error proof! This will be the showstopper for your 4th of July weekend, Olympic viewing & cheering (Team USA!) or for Election night! It’s quite delicious, and everyone will love it! Most importantly it’s easy and it’s so fun to make.
