You’ll become addicted to these Pumpkin Spice Snack Mix Crackers with the very first bite. Some people like to call it a “Crack Mix” because you cannot just have one. They’re sweet, buttery and crunchy and let’s not forget to mention just how good your house will smell once you bake them!
Yes! If you’re looking at the above picture and thinking, gosh they look like Oyster Crackers. Well, they are! Unquestionably, they’re so much more loaded with all the Fall flavors that we love. I found my bags of Oyster Crackers at Target for $1.19 each. You can make this snack mix literally for a few dollars. You’re most expensive items will be the Oyster Crackers (for this recipe I used 2 bags) and your stick butter. Which you can typically find for less than $2 at your grocery store.
My kids love this Pumpkin Spice Snack Mix Crackers in their school lunches, and my husband enjoys them for a work snack. Because they have all the Fall flavors and tastes that we love!
Surprisingly, this Pumpkin Spice Snack mix only took about 5 minutes to prep. Ten minutes to bake, and about 1 more minute to add the sugary topping. It’s a quick recipe that you can do in a matter of minutes. You can even have your kids make it!
Here’s the simple recipe:
Ingredients:
8 cups of Oyster Crackers (2 bags)
3 sticks of melted butter
1 cup of brown sugar
2 teaspoons of vanilla
2 teaspoons of cinnamon (or pumpkin pie spice)
Topping Ingredients:
3 Tablespoons of sugar
1/4 cup of brown sugar
1-2 teaspoons of cinnamon or pumpkin pie spice*
Baking instructions:
Heat your oven to 350*
In a small sauce pan combine your sticks of butter and brown sugar over medium heat and melt together.
Stirring often.
Allow mixture to come to a boil for about 1-2 minutes.
Remove from heat, and add your vanilla and cinnamon or pumpkin pie spice and mix well.
In a large mixing bowl pour your Oyster Crackers into the bowl, and add your heated mixture of butter, brown sugar, vanilla and spice on top of the Oyster Crackers.
Mix really well. So that every cracker is covered in the heated mixture.
Spread your mini Oyster Crackers with the topping already on them – on a large foiled lined baking sheet (I used my commercial size sheet pan)
Bake for approximately 10-12 minutes.
While your crackers are baking:
Mix your sugar topping together.
Add your sugar, brown sugar and your cinnamon or pumpkin pie spice together in a small bowl.
TOPPING instructions:
Once your crackers have finished baking, sprinkle your sugar topping on the crackers while they’re still hot.
Mix everything together so that every cracker has a sugary coating.
This allows your crackers to absorb the sugar mixture and make them extra good.
When your crackers are cool, place in an air tight container. I’ve used an air-tight glass canister jar, like you see in the pictures on this post. Or I’ve also used a gallon size storage bag. Whatever you use, just make sure it’s air tight.
Obviously you may use Cinnamon if Pumpkin Pie Spice is not your jam. Pumpkin Spice everything is the theme in our house during Fall. Thankfully, my entire family enjoys this flavor as much as I do. Because I’m on team Pumpkin Spice EVERYTHING! For all of you who maybe on the fence about using the PS seasoning for this recipe, it truly is mild tasting. I don’t think it’s strong at all.
