You know how sometimes you have to make yourself eat right or light?
And sometimes, you just dread it?
Well, that is NOT the case with this recipe. This Avocado Lime Chicken Salad is the bomb diggity.
No doubt.
I don’t even miss the bread with this. And that my friends, is saying something! Because if I don’t miss the bread – you know it must be good!
First, it has all my favorite things in it.
Cilantro, Lime, Avocado, Tomato and did I mention Lime?
I think Lime is the most under used fruit there is. I love the taste it gives or the flavors it tends to pull out when used!
Remember no perfection here when cutting or putting these Avocado Lime Chicken Salad Boats together. We are only going for taste & taste alone!!!
Here’s what I did:
I cubed 2 Chicken breasts – from a rotisserie chicken (Costco) see, I told you no perfection here
Juice from 1 lime
1/4 cup of mayo (maybe even less)
S&P or sea salt if you have that
Garlic Salt to taste* optional
Mexican Seasoning to taste* optional
about 10 Cherry Tomatoes sliced
several twigs/leaves of cilantro
1-2 Hass Avocados sliced & cubed
I combined all of that in a bowl and blended & folded together lightly with a spoon. If your lime is rather big, you probably wont need much mayo. When I’m really trying to cut back on calories I will omit the Mayo completely. The lime juice is so good with all of it and pulls all the flavors out, and makes it all taste so good together.
I recently heard that eating an avocado a day can really help your cholesterol. Since I’m not getting any younger, I started thinking about how I could incorporate an avocado a day into my life. And I realized rather quickly, that’s something that would be really easy for me to do. I found this chart below, and I thought I would pass it along. The source is linked below it, you’ll probably find a lot of helpful info on that site. But if you’re like me, it’s not hard at all to think of a few other things that you can do with an avocado.
