Hello friends! I’m excited to share one of the easiest recipes you’ll ever make. These Christmas Energy Snack Bites are perfect for the kids, adults or a grab & go snack. Because we all know this is the busiest season of all, and having a quick energy snack can make all the difference.
This is the last and final Tastes of the Seasons blog tour of the year. This tour has been hosted by my friend, Kristen from Ella Claire Inspired. Each month she has created a blog tour with a seasonal theme or favorite in mind with various bloggers. And each month the recipes have been incredible to view, not to mention delicious looking. This month’s theme is delicious Christmas treats.
Although, some may argue that these Christmas Energy Snack Bites aren’t really a “treat” per say – they are delicious, and have some of our favorite ingredients in them.
Ingredients
- 2 cups rolled oats
- 1/2 cup peanut butter
- 1/4 cup nutella
- 1 1/2 tsp coconut oil
- 1/2 cup powered sugar
- 1/2 - 3/4 cup white melting chips
- a handful Christmas M&Ms
Instructions

Mix your rolled oats, peanut butter, nutella & oil in a bowl until your mixture is well mixed. With a small cookie scoop, form balls or bites from your mixture. Place on tray or rack.
Pour your powered sugar in a bowl, and roll each bite into your powered sugar. This step and ingredient are totally optional.
In a microwave safe bowl, melt your white chocolate melting chips in 30 second intervals. Heat your chocolate melting chips until they are fully melted. Dip your bites into the melting chocolate and place on a tray or rack. Top with a few M&Ms while the melting chocolate is still warm and melted.
Serve as soon as they're firm, or store in an air tight container and enjoy.
I love having these Christmas energy snack bites on hand. My kids love them in their lunch box, or for an after school snack. They’re also perfect paired with a banana – in my opinion. Of course, you can totally omit or add your favorite ingredients to these snack bites. There’s no rules with this easy & quick recipe. They’ll get devoured any way you make them.
